Apprentice Chef – The Roebuck Bay Hotel (Broome)

The Roebuck Bay Hotel is an iconic hospitality venue in the heart of Broome, offering premium food, beverage, and entertainment experiences. We take pride in delivering outstanding customer service and fostering a vibrant, team-oriented work environment.

We are looking for an Apprentice Chef to join our busy team at The Roey (Broome).

Open to all level apprentices from brand new to 1st, 2nd, and 3rd years.

Our kitchen works at a fast pace and work schedules may include weekends.

You will need to be passionate about food, career-driven, and a team player.

Training for an apprentice cook covers basic culinary skills, knife skills, knowledge of ingredients, use of commercial equipment, and kitchen procedures.

Day-to-Day Operations

  • Implement Bright Brewery’s food service guidelines

  • Competently run the pizza section

  • Competently organize food preparation as instructed

  • Maintain fridges – keep clean, organized, and products dated

  • Maintain dry store area – keep clean, organized, and clearly labeled

  • Communicate with Chefs regarding stock

  • Complete the Apprentice Chef coursework as required

  • Provide regular input on menu items and specials

  • Be able to take direction when required from other Managers / Supervisors / Chefs

  • Ensure all communications between bar and kitchen run smoothly and with respect

  • Demonstrate a creative flair with food

Food Safety

  • Preparation and service of food to Food Hygiene Standards

  • Ensure proper stock rotation in all food storage areas

  • Maintain all work areas in accordance with Food Hygiene Standards

  • Maintain a regular cleaning schedule for kitchens and storage areas

  • Manage delivery and storage of goods (heavy lifting involved)

Food Costs

  • Ensure that all dishes are prepared to the correct recipe and quantity

  • Record all wastage and breakages

  • Only complete orders from dockets

Other Duties

  • Reporting all accidents and hazards in your work area and complete all paperwork as required

  • Complete tasks and projects delegated by the Head Chef

  • Complete tasks and projects delegated by qualified Chef

  • Perform other duties as reasonably directed or otherwise required

  • Attend required meetings as per the Roebuck Bay Hotel meeting matrix, and other meetings and training as required
